F.A.W.C! Talk with Kent Baddeley

Acclaimed chef and F.A.W.C! favourite, Kent Baddeley, boasts an impressive resume spanning five decades within New Zealand and beyond. A pioneer of organic farm to table, Kent Baddeley, has a reputation for harnessing the goodness of local seafood, meat and seasonal produce to create outstanding fare with unexpected culinary twists.

We chatted with Kent about his continuing stellar career, and his and Unison Vineyard’s Summer F.A.W.C! event ‘The Dish that Ran Away with Kent’ and why you should be seated at the table.

As a seasoned chef, where do you find the inspiration behind your dishes?
I have been lucky, or cursed, to have had recipes in my head from a very young age….

What has been the most memorable dish you’ve created?
Well!! That’s a big question - over 100,00o dishes in the career so far. Let’s say my favourite has always been the marshmallow ravioli with chocolate!

What’s your favourite season for produce in Hawke’s Bay, and why?
We call our food micro seasonal, ie: what we harvested this day, and I love the unexpected nature of this. But spring and early summer with its exuberance and tang is hard to beat.

Over the years, what would you say has been a career highlight(s)?
My absolute highlight was marrying my wonderful maître d. I ironically proposed at the Masonic in Napier before we bulldozed the ground floor! I’ve cooked and hosted for some wonderful clients that have now become good friends, certainly a humbling highlight. The answer that also comes with the territory: cooking for many Royals, Sultans and the Chairman of China.

Talking F.A.W.C!, how did the collaboration between yourself and Unison come about?
Between a friendship with Lee Martin at Unison Vineyard and myself. I’m so looking forward to it – I have really only consumed the product to date.

‘The Dish that Ran Away with Kent’ is a very creative and interesting dining concept. What can F.A.W.C!ers expect from your event?
A crazy ride back to their memories…first spotting the one that they fancied.
