Paolo began his career in Italy’s first three Michelin Star restaurant, then cooked his way through the best kitchens in Tuscany before adventuring off shore to work in kitchens throughout Asia, the USA and Australia. He and his wife Sass moved to New Zealand in 2008 where he was appointed Head Chef at the newly opened Milk and Honey Restaurant in Napier. Paolo’s simple, honest food has created a loyal following in Hawke’s Bay. His awards include winner of the Maimai Creek Outstanding Chef in the 2010 Hawke’s Bay Hospitality Awards.

Paolo and wife Sass brought all their experience, enthusiasm and joy for Italian food to their own venture, Molto Italian Kitchen.

From the end of 2017 Paolo is the catering manager at Hereworth school in Havelock North, sharing his passion for good food.
