'Hillbilly' Wes Griffiths is Australia's top pit-master.  He is the owner operator of 'Bovine and Swine', a well-known BBQ joint in Sydney.  He learnt his trade in Austin, Texas working with the best in the business.  He returned to Sydney and worked at the famous 'Vic Meat Market', before going on to open Bovine and Swine'.
