Piri-piri cheeky chicken lunch dish served with coconut rice
Anyone who has spent some time in Africa will know that something Piri-Piri will often be found on the local menus – it is the name used to describe the African bird’s eye chili which is a natural preservative which is good in Africa for obvious reasons! In this instance we are proud to use Hawke’s Bays own Orcona Chillies.
A good piri-piri sauce base is made from crushed chillies, citrus peel, onion, pepper, garlic, salt, lemon juice, bay leaves, paprika, pimiento, basil, oregano, and tarragon. Recipes vary from region to region but the common ingredients are chili, lemon, oil, garlic, bay leaves and red bell peppers.
We have often been asked to have something African on our menu with a local Hawke’s Bay twist along with a little ode to our Pacific sojourn – so here it is!
Birdwoods Piri-Piri Chicken served with Coconut Rice – (gluten free and a vegetarian option available)
The dish will have a mild heat rating however, we will have the extra hot stuff for those who love a bit of extra heat to tingle the taste buds!
